Our vision of great bread starts with flour. Flour
comes from a living plant and loses its freshness
like any other produce product. We put a stone mill
in our bakery so that we could fresh mill flour
ourselves: We lightly crush the grains to keep the
germ oil and bran in the flour mix. We stone mill
every day here in the city, close to our customers.
We are the only urban mill who offers fresh stone
ground flour.
Brodflour's baked products are baked with flour
that is only a day or two old, so that as much of the
goodness and nutrients remain as possible. Baker's
will enjoy its active nature and volatility - starters
will come to life faster - and will be able to create
products of exceptional flavour and texture.
